If my swing speed is 100-105 mph should I get a driver shaft that's stiff, regular, or super flex?

Stiff flex will be best for you. You don't want an XStiff unless you are swinging around 115+ and you don't want a regular if you are below 95. That's the basic rule I tell people and almost any company will tell you.
Note- the shaft stiffness will depend on the actual shaft, if you go to the shaft makers website, in this case TaylorMade's, you should be able to find a chart that will make recommendations based on your swing speed, launch angle, etc.

what golf clubs should i buy?

i am an average golfer and i am 16 and 5'9 or 10" and have £300 to spend on irons and £120 to spend on a driver

personally i was thinking the nike sq sumo2 hybrids/irons and the nike sq sumo2 5900 driver. are these good and what else do you reccomend.

are these good choices. right now i am hitting 250yrds with dunlop driver and 220 yrds with 3 wood.

You are young and still growing, so I would not recommend going through a fitting for clubs until you have a VERY consistent swing.
It sounds like you are hitting your current clubs very well - what do you hope to gain from getting new clubs ?
